This is a world-renowned procedure that originates from the Beaujolais region in Burgundy. Using this method, we macerate whole, selected grapes in cisterns under the influence of CO2. Within the grapes, certain processes occur that accelerate the transfer of aromatic and colour substances from the grape skin into the juice, and afterwards the must ferments at a controlled temperature
